Hello everyone! I am proud to say that last week I won an award for the best chicken recipe at Cleveland State University Black Faculty and Staff Soul Food Cook Off! It was a lot of fun and all the proceeds went to a book fund to help students. Just in case anyone wants to see it the recipe is listed. I prepared my Asian Caramelized Chicken Wings. Enjoy!!! Asian Caramelized Chicken Wings 3 lbs chicken wings 2 tablespoons olive oil 1/2 cup soy sauce 2 tablespoons ketchup 1 cup honey 1 garlic clove, minced, to taste 1 tsp fresh ginger, minced 1 1/2 tsp salt 1 1/2 tsp ground black pepper 1/2 tsp garlic powder 1) Preheat oven to 375°F. 2) Season chicken with 1 tsp salt, 1 tsp pepper and garlic powder. 3) Place chicken in a 9x13-inch baking dish lined with heavy duty foil, sprayed with cooking spray. Bake for 25 minutes. 4) Drain fat. 5) Mix the oil, soy sauce, ketchup, honey, garlic, ginger, salt and pepper and pour over the chicken. Bake at 375°F (190°C) for 30 minutes or until sauce is caramelized. Last update : 27-03-2008 15:08
